Spring is here and the berries are getting more flavour. Here’s a recipe for some delicious Raspberry Chia Jam that’s very quick and easy to make. It’s perfect with a nice bowl of porridge, spread on toast or as a filling in cookies or a fruit tart.
100g pitted medjool dates, roughly chopped
200g fresh raspberries
1/2 tbsp chia seeds
1 tbsp lemon juice
1. Blend the dates and two thirds of the raspberries until smooth.
2. Transfer to a bowl and add the rest of the raspberries and mash with a fork.
3. Stir in the Chia seeds and set aside for about 15 minutes.
4. Taste and add lemon juice as required.
