This simple but flavourful and nutritious dip is the perfect addition to your lunch. Wonderful served as a snack with raw veggies or healthy crackers or for lunch atop your salad bowl. Packed with Vitamin A, Vitamin C and fibre, sweet potatoes are excellent for your immunity and digestion. The hummus can be made in advance and left in the fridge overnight or even frozen.

I have used this as a dip for vegetable crudités and seed crackers and have smothered it on gluten free bread for a very satisfying lunch – all equally delicious! The tub size was very generous, so I decanted a few portions into smaller pots and popped them in the freezer and the taste was not affected at all.
